Sörkan Rinkula is serving special bagels during Helsinki Food Weeks in collaboration with Fisupojat and Hyötykasviyhdistys.
Sörkan Rinkula, operating in Sörnäinen, is the first restaurant in Helsinki whose main product is a freshly baked bagel. Bagels are baked every morning on the spot using a traditional recipe, i.e. first they are boiled in boiling water and then fried at high heat.
In addition to the bagels themselves, the fillings, which are made from quality ingredients from small producers in the surrounding areas, also play an important role.
Food weeks' special bagels highlight ingredients that are not necessarily very popular - even if you wish they were. Sörkan Rinkula has aim to bring multipurpose domestic classics back to people's minds.
For the last few years, smoked salmon from Kalatukku Fisupojat has been used in bagels, and the dry-cured salmon has been prepared in their own kitchen.
For the food weeks, there has been selected also wild fish that are considered more like trash fish from the fish wholesaler's selections.
Another specialty is the veggie bagels by gardener-chef Elias Pusa, who has been running food courses of Hyötykasviyhdistys.
